Tortilla de Patatas

My friend from Barcelona come over one night and showed me how to make this simple, delicious potato omelette.

Instructions:

  1. Slice potatoes into thin slices.
  2. Chop onion coarsely.
  3. Scramble eggs.
  4. Heat up more oil than you think. Use a potato slice to test when the oil is hot enough (should sizzle).
  5. Add potato slices and onion, stir occasionally, until the potato starts to break apart.
  6. Add contents of pan to eggs and stir gently, add salt to taste.
  7. Put contents back into (smaller) pan for a few minutes, covered. Flip2 and repeat.
  8. As a nice little starter, toast inside of baguette, slice tomato in half, smother tomato into bread and put some cured meat on top.

  1. Prosciutto as a substitute.

  2. For us, the less brave, we can use a plate to cover the pan and flip quickly, then slide the flipped omelette back into the pan.
